Fat Tuesday Rewind

Fat Tuesday, Mardi Gras, Carnivale, what ever you choose to call it, it’s traditionally the last day of living in excess before reeling it all in for Lent, if that’s how you roll. I mean, most of us are shameless hedonists the other 325 days of the year, right? Well, I really threw down big this Fat Tuesday. Oh yeah.

While some may slam down hurricanes and flash guys for beads, I brought home cupcakes for the husbo and I for dessert. Scandalous, no? Please keep your judgments to yourself :) . So on the eve of Lent, we enjoyed a super-tasty meal of spaghetti squash, some cupcakes from Buttercup, and crashed out early watching the Olympics. Like I said, I go out BIG.

I picked up the spaghetti squash on Saturday at the Farmer’s Market. I admit, I’ve never used it before and was skeptical of it’s spaghetti-ness, as pasta-lover. After nearly severing a digit trying to remove my knife from the squash (note: if time allows, bake the squash WHOLE, it’s really hard and somewhat dangerous to attempt to cut it in half raw). After scooping the guts out, I baked it rind-down in the oven at 375 for 30 minutes. Next, just take a fork and scrape the spaghetti goodness out.
The spaghetti from one squash was enough to fill the bowls and bellies of the husbo and I. We added some Rao’s Marinara (aka bottled heaven), some parmesan, and fresh Italian parsely. Oh and leftover eggplant. It was super simple and oh so delicious. Spaghetti squash will become a regular in this house. I was pleasantly surprised that it had the same heft and bite as it’s semolina step-cousin.
Next up, us two crazy kids split some cupcakes from Buttercup on the Upper West Side. I had gotten a red velvet cupcake with buttercream frosting and one that was gingerbread with pumpkin cream cheese frosting.

Both were absolutely delicious in their own way. And I refuse to pick a favorite. Yes, refuse.
So there you have it. My wild and crazy home celebration (reported two days late). Did you do anything to celebrate Mardi Gras? Did it rival the throwdown I had?
