Adventures in Allergen-free Baking

This week has been totally amazeballs. I picnicked for dinner not once, but twice in Central Park with the foxy hus. AND I’ve hit up a class at Core Fusion every day since Sunday. (Nothing like yuppie scumming on my $40 unlimited week-long pass!).

So pretty much all week I’ve been craving french toast for some odd reason. Random, I know. So without eggs, and a little gluten intolerance thang, I thought I’d experiment with a gluten-free, vegan version of it. And hey, why not make it soy-free too.

I’ll admit that I haven’t had too many experiences with vegan, allergen-free baked goods. The ones I’ve had have been good, but I hadn’t made any myself. I mean, I’m pretty skeptical that anything can be sweet and delish without all the “good stuff.”

Banana French Toast Casserole

Gluten-free, vegan, soy-free

  • 6 slices of sprouted grain bread (I used Ezekiel)
  • about 1c unsweetened vanilla almond milk (any other milk could probably be substituted)
  • super-ripe bananas (I used 3)
  • 1/4c maple syrup
  • cinnamon
  • vanilla extract (2 tbsp)
  1. Oil a square oven-safe dish.
  2. Cut the bread into cubes and sprinkle in the dish.
  3. Mash bananas.
  4. Mix in almond milk, maple syrup, vanilla, and cinnamon.
  5. Pour liquid mixture evenly over the bread cubes. You may want to add more almond milk to get the desired consistency.
  6. You can now pop this in the oven right now. 20 minutes at 375 and it will be allergen-free perfection. I do, however, recommend letting the casserole hang out in the fridge overnight to let the bread soak everything up (yum!). Prior to baking it, I’ll drizzle a little more maple syrup and cinnamon on top.
  7. Enjoy!

Good Vegan Morning To Ya

I woke up this morning and after realizing that my breakfast was vegan, I decided to make the rest of my day vegan too – in honor of the Vegan 4 A Day Challenge I learned about at Silly Tater Tot and Eating Journey.

So far, I’ve had a shot of wheatgrass, a carrot/mango smoothie (yum), a banana, a spoonful of almond butter, and some yerba mate tea.

Carrot/mango smoothie was just organic carrot juice and some frozen mango blended together. It was really, really refreshing. I think I may do this in the morning more often.

So there’s breakfast. It’s not unlike my usual breakfast. While I consider myself an omnivore, I rarely eat meat. I’m pretty picky about it and only buy it from my Farmer’s Market… maybe monthly. The vast majority of my meals are vegetarian. In fact, in honor of world vegetarian month, I ate completely vegetarian for the month of October (read about it here, or here, or even here). I eager to see what hurdles I run into (or not) when veganizing all the rest of my meals. I’ll keep you posted!

Connected!

Finally! After 2 weeks of chasing shoddy, unsecured wifi and listening to the radio for entertainment at home, I’m connected! Cable guy saved our little tech-dependent lives and now I’m back. I knew it was getting really bad when on my train ride to Philadelphia on Friday, I checked Twitter on my iPhone and was like, “Who’s balloon boy, and why is everyone talking about him?” Ha, seriously though, I had to look it up on CNN.

In the last few days I went home to see my newest niece (brother and sister-in-law just had number 4… I’m up to 3 nieces and 1 nephew). I hung out with my parents on Friday night, then had nieces and nephew time at the movies (by the by, Cloudy with a Chance of Meatballs was actually pretty great). Home now, though, and getting a few things done in the cold, crappy rain. Mother Nature is slapping me in the face with reality… I was getting a bit too romantic with the I love fall in New York, it’s sooo beautiful. Friday was my wake-up call when I remembered, Oh right… it’s cold, rainy, and windy about 80% of the time from October to April here… Ah well, such is life.

Started off this morning with a little egg-y goodness for the husbo and me. I had one egg scrambled on whole wheat toast with a little sharp white cheddar and dabble of salsa. Husbo has the same, but two eggs fried. He’s been working around the clock and it was really nice to wake him up with coffee and breakfast all ready to go.

Return to Normalcy

Finally back to normal! We are officially moved in to our new place. I have a lot of unpacking to do, but I’m so excited to put everything away. Yesterday was kind of crazy – I’ve never actually stayed completely awake that long in my life. Luckily, our new place has a really nice little jacuzzi bath tub and I soaked in a nice hot bubble bath before bed. It was heavenly and I think it’s perfect after a VERY long week.

I haven’t taken too many pics (yet), and we don’t have internet set up, but I’ll be back with loads of pics and maybe even a super organized new fridge/freezer!

Quick News –

- Vegetarian October is going really well! It’s been a really natural transition.

- Our first foodie field trip will be next Friday (I’m very excited!)

- I’ve signed myself up for a facial (Wednesday), and a massage (date TBD) – I deserve it after the last few weeks!

Also – I want to get myself a little housewarming gift… I’m thinking a 12-cup Kitchen Aid food processor. Thoughts? Suggestions?

Feel Good/Look Good, Look Good/Feel Good

Good morning! For some reason, I’m feeling remarkably chipper this morning – despite the fact that I drank a little a bit too much vino last night with husbo, went to bed waaaay past my bedtime, AND there was no hot water for a shower this morning.

No overnight oats for me. Just the regular kind with maple syrup, brown sugar, a dollop of pumpkin, and some almonds. Yum! A little sweetness certainly doesn’t hurt :)

I think I’m also really excited to start a new day. After yesterday’s look in the mirror (literally), I decided to set a few goals — one is taking a little bit more time in the morning so I look as good as I feel. I’m not really doing it for the sake of others, but I know that when I feel I look good, I feel better as a result (and vice versa). So today, I’ll do it. Also, there are some bigger goals for October (I’ll tell you them tomorrow!) that align with this inside/out transformation.

Don’t Phone It In

is what Jillian Michaels told me this morning as she pounded me into oblivion in her “30 Day Shred“ video (level 2). I mean, it’s quite a way to wake up at 5:30 am, but I can say without any hesitation that I’m definitely awake now.

After Jillian’s Intensity in ten cities workout, I hit the showers, and then dove into my well-deserved overnight pumpkin oats and white tea. All this before 6:30. In the morning! Haha.

It’s now a typical morning here before work – I just feel much much more accomplished, and now don’t have to worry about squeezing in a workout tonight when I’ll probably either be exhausted, or busy doing something else. I really do like working out in the morning. Ideally, I’d run in the morning, but it’s pretty dark here at that hour and I’ve seen many unsavory characters in those wee hours… so for now I’ll steer clear.

On the agenda today:

  1. Workout w/ my friend Jillian DONE!
  2. WORK (Tuesdays are my busiest work day, wish me luck)
  3. CLASS
  4. A little cardio at the gym (Cycling or elliptical, methinks)
  5. More leftover dinners at home w/ husbo
  6. Finalize moving plans
  7. Get lunches, etc. ready for Wednesday

Here’s my monster lunch with lots o’ little snacks to get me by (pb&j on whole wheat, apple, pear, yogurt, granola, goldfishies as a little treat, and a banana).

I’m so excited that it’s finally Friday! I’m gearing up for a really busy weekend, though. I’m starting it off with an excellent breakfast to get me through…

(Sorry, pics not uploading for some reason today). It’s the usual, though! Overnight pumpkin oats (1/3c vanilla soymilk, 1/3c oats, 1/3c pumpkin, splash of maple syrup). On the agenda for the rest of my day:

  • 3:15 leave school
  • 3:30-5 hit up Target for shoes for wedding tomorrow, buy packing materials to finish packing (move next week), pedicure (maybe)
  • 5-8 packing the rest of the kitchen
  • 8-? Dinner and more packing.

Yikes – it’ll be a busy one. I’ll be sure to squeeze in a Starby’s pumpkin spice latte on my way to Target. I’ll check in this afternoon.

Great Morning!

Since I was just saying that I’ve been falling into routine, I thought I’d share exactly what that routine is. Let’s start with my AM routine…

I wake up anywhere between 5:30 and 6. Brush teeth, wash face, etc. Next I do a little stretching to wake me up a bit. Then into the kitchen to get some vittles ready. In the kitchen, I prepare my breakfast beverages (white tea, water, and a tea mug for work with yerba mate) by putting the water on to boil.

While the water boils, I make my lunch (today it’s a bean tortilla, an apple, a pear, loads of water, and a coconut water for after yoga).

Then I get breakfast ready. This morning that only involved taking my overnight oats out of the fridge. I had to try overnight oats after I had seen them posted so much on Kath Eats Real Food, Runner’s Kitchen, and  Eat, Live, Run. Wow – they aren’t kidding! Overnight oats are super delishy. My own concoction consisted of 1/3c oats, 1/3c vanilla soymilk, 1/3c pumpkin, and a splash of maple syrup. Soo tasty!

Once the water boils, I’ve packed my lunch and am ready for breakfast. (At this point, from wake up time, it’s only about 20 minutes). As I enjoy my breakfast, I check my Google reader and answer emails.

Once I’m done, I may finish my tea, then get dressed for work! Pretty easy-peasy. I don’t have to be at school until about 8, but I like to get in at 7 to get some work done. With this routine, I don’t have to think too much and it gets me out the door on time.

Sleepy Morning

Hello! I’m usually such a morning person, but I’m a little sleepy this morning. Nevertheless, I’m up and did some exercises: 50 crunches, 15 push-ups, 20 squats, 20 dead-lifts. Right now it’s tea and 1/2 pb&j on whole wheat time, while I lament the fact that I didn’t go to the grocery store yesterday to get produce (we’re almost all out!)

Last night, the husbo worked late - very late. I like to wait up for him even if “waiting up” means leaving the tv on and falling asleep on the couch until he gets in which is what happened last night. He finally rolled in a little after midnight, and when you work at a 9-5 office job, this is extreme overtime. Anyhow, he was super-hungry when he came in so I heated up some dinner and then we went to bed. 5 hours later I woke him up to head back to work. Wow.

While I don’t ever work those crazy hours, my job can be extremely stressful. Many of us are stretched thin and have a lot of pressures in our lives. How do you take care of yourself when you are really stressed? How do you slow down and find time for yourself?

For me, exercise is key. Running is very cathartic for me. I can really clear my head while running outside and listening to only the pace of my footsteps. I tend to schedule some time to run on a really stressful week, even if only for a few minutes. It really calms my nerves and gives me uninterrupted alone time to work through problems.

I also tend to isolate myself from negativity. Lunch with teachers at work can often be a festival of complaints, and when I’m stressed and worked to the bone, I find a quiet lunch by myself, or with a book, really restorative.

As far as easing the transition back into the work week, I tend to use Sunday to cook a bunch of meals, prepare some lunches, etc. This can save me a lot of time during the week and also ensure that I am still getting very healthy, home-cooked meals despite not having much time. I’ll be posting quite a bit on make-ahead meals in the upcoming weeks.

These are a few things I do to keep stress at bay. So let me know - how do you deal?
